These oatmeal biscuits are soft, chewy, and full of banana flavor! The recognizable cozy spices and plump blueberries make these much more irresistible. They'll keep for a minumum of one week if kept in an airtight container in the fridge --if they last long!
1 cup (100g) instant oats (fermented if required and quantified like that )
3/4 cup (90g) whole wheat or fermented * flour (measured like that )
1 1/2 teaspoon baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
2 tablespoons (28g) unsalted butter or olive oil, melted and cooled slightly
1 teaspoon vanilla extract
1/2 cup (120mL) pure maple syrup
1/4 cup (40g) raisins
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. Add the flour mixture, stirring only until incorporated. Allow the cookie dough rest for 10 minutes.
Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.
